Sopa Verde with Turkey Meatballs

If you’re as bored with the traditional turkey as I am, this soup will break the bird boredom. Filled with southwestern flavor, this soup is very refreshing and light, it is perfect with some heavy side dishes. If your’ e stuffed to the gills with turkey, you can always use pork instead, but why not stay festive?

Turkey Meatballs

Ingredients

1 lb ground turkey

2 eggs

1 ½ cups bread crumbs

½ tbsp cilantro

Salt to taste

Fresh Cracked pepper to taste

1. Mix gently in a large bowl and gently form balls in your hand.

2. Saute with butter in a large skillet until cooked through.

3. Reserve a few balls to cook with veggies in broth.

Tomatillo Broth

Ingredients

2 cups Chicken Stock

6 Tomatillos, quartered

6 cloves of garlic crushed

4 leaves of fresh basil shredded

The juice of 3 limes

1 tbsp cilantro

1 half onion sliced

2 Jalapenos, seeded, veined, and sliced

1. Combine tomatillos, lime juice, basil, cilantro, chicken stock and half the garlic in a blender. Add salt and pepper and blend until smooth.

2. In a soup pan sweat the other ingredients with butter and a few uncooked turkey meatballs until the meatballs are mostly cooked and the veggies are translucent.

3. Add the stock mixture and simmer for 30 to 45 minutes.

Almond Rice

Ingredients

Prepared rice according to instructions

2 tbsp butter

½ cup almonds slivered

½ cup almonds slivered

1. Toast the almonds in a saute pan with butter.

2. Once the almonds barely begin to brown add the rice and stir until combined then quickly remove from the heat.

To Serve

1. Layer on a plate or in a bowl beginning with the rice, then a few meatballs and then top liberally with soup.

2. Garnish on top with a chiffonade of basil. To Chiffonade: take a few leaves of basil and roll into a tight cylinder, then slice back with a knife making long ribbons.

Talking tequila

Blanco Tequila can be delightful with flavors of herbs, pepper, and agave. This drink is bold and compliments the soup quite well. If you love margarita’s you’ll adore this with it’s added herbal flavor.

Now, when I’m talking about Tequila, and I often am, I am referring to 100% Blue Agave Tequila and not mixto.

This artful spirit can take 12 years to make since the agave is very slow growing. So buy good product andnot frat house shooters.

Basuila Smash

Ingredients

1 ½ oz Blanco Tequila

1 oz Domaine De Canton Ginger Liqueur

1 oz Lime Juice

1 tbsp Sugar

2 leaves of fresh basil, shredded

Garnish: Lime Wheel.

Muddle basil and sugar, add lime juice, domaine de canton, and Tequila. Add ice, stir, and garnish.
